I’m thrilled to share with you a simple yet sublime dish that has become a cherished staple in my culinary repertoire: Japanese Sautéed Mushrooms.

These can be just any mushrooms; sautéed with a delicate balance of soy sauce and the gentle warmth of garlic, these mushrooms transform into a tantalizing topping that can grace any dish with its presence.


400g mushrooms of your choice (shiitake, oyster, enoki, etc.), cleaned and sliced

110g medium onion, thinly sliced

12g garlic (about 4 cloves), finely minced

4 tbsp (60ml) Japanese soy sauce

2 tbsp (30ml) unsalted butter or olive oil (use olive oil for vegan version)

Optional: 1 tsp (5ml) sesame oil

Optional garnish: 5g toasted sesame seeds and 10g sliced green onions for garnish

Step by Step Instructions

Step 1

Cook Mushrooms: Increase the heat to medium-high and add the mushrooms, cooking until nearly done and golden brown, about 5 minutes.

Add Garlic and Water: Add the minced garlic to the pan, cooking for about 1 minute until fragrant. Then, add 30g of water to the pan, and cover for 1-2 minutes to allow the mushrooms to steam and become tender.

Step 4

Uncover and Season: Remove the lid, let any excess water evaporate if necessary. Pour in the soy sauce, and if using, drizzle with sesame oil, stirring to combine all the flavors.

Step 5

Garnish and Serve: If using, sprinkle with toasted sesame seeds and green onions before serving.
