SOURDOUGH BREAD/BAGEL
ARE YOUR SOURDOUGH BREAD SOUR?
Everyone reacts differently to acidity, so there is not easy answer to this. Even in our household, same bread, will trigger different level of palate reactions. But on a serious note, from the way we activate our starter (Alexandar), and the duration of our cold fermentation, the bread will inevitably have some acidity to it, but we are consistent in keeping the acidity to the minimum; almost like a hint, and not in your face kind. Most people will find our bread easy on the tanginess.
HOW LONG WILL THE BREAD STAY FRESH?
All our sourdough bread are bake-to-order and without preservatives. If you are not able to consume the bread within the same day. We recommend that the bread is sliced to your usual portions, placed in air-tight bag like a zip-lock bag, and freeze. Yes, freeze them even if you are going to eat it again the next morning. We know that our instruction sheet that comes with every bread indicates 2-3 days in ambient, but we know some of us will look at the bread on the 5th day and say, "oh gosh! I forgot to eat this!". So, please, put it in the freezer, and it will last for weeks. Whenever you want to eat them, remove the portions you like to consume, lightly spray some water on it, toast it or heat in oven at 150°C for 8-10mins. And it will be as though you just purchased them. We know this because we still eat mysterious bread in the freezer from forgotten time. (Not recommending you should do the same)
WHAT GOES INTO THE SOURDOUGH BREAD?
Someone did not read our bread description here . 😛 ok, apart from the French, Italian and German wheat/rye flours, whole wheat, grains, cereals and seeds, the rest are just water, salt and our sourdough starter, “Alexander", absolutely no commercial yeast is added. The rest is overnight fermentation of the dough which develops its flavours. Even in our “sweet” sourdough bread like raisin walnut and trio fruits, we do not add any other kind sweetener other than the ingredients themselves.
We are of course, not anti-sugar, anti-fat, or anti-dairy. We just like to keep our master dough as lean as they can be for now. There will be sourdough bread/pastries in the pipeline that we have to include ingredients essential to the profile of the creations. What different is that we will be up front about our ingredients used so that you know exactly what goes into your body when you consume our products.
WHY ARE YOUR BREAD NOT SLICED?
Ok, we have to put it out there, buy a good bread knife! *lol*. By default, all our sourdough bread will be delivered as is; a whole loaf. This is to best preserve the freshness of the bread as sliced bread loses moisture quickly, and also tends to absorb ambient scents.
Upon request, we can do a pre-slice; where the bread are sliced but with the bottom crust intact so as to prevent the slices from falling apart, just use a pair of scissors to free the slices at your convenience. If it is up to us, we prefer our bread to exit the oven, onto the cooling racks, and then right into the packing bag, without detour to chopping board, bread knife, and etc.
For bagels, they come in the original round shape. And no slicing will be done to them.
DO YOU NEED A LICENSE TO SELL THESE BREAD?
Ok, we think you are asking if it is legal and safe. First, yes, it is legal. And No, no license is required for small scale baking. Its true, read here,
In addition, though not required for home based business, Vincent the main (and only) baker has a valid Food and Beverage Safety and Hygiene certificate which is the same certificate required for commercial food handlers. We also have to abide to the COVID-19 guidelines in terms of self-collection/delivery of our products. Read here:
We also only purchase our ingredients from Food service wholesalers with traceable brands and source of origin. This also ensures all products are legally imported and passed AVA inspection at the point of import. We can be home bakers, but we believe in doing things right from the very beginning. It is however, illegal for us to sell to businesses which resell our bakes. Or businesses to buy our bakes and resell them (with or without our knowledge).
If you like to purchase for your business, give us a ring and we can discuss on how can we do that (legally, of course!)
WHAT IS THE SIZE OF YOUR SOURDOUGH BREAD?
We maintain a consistent dough weight of 630g before baking for most SD bread, different bread will have different weight after baking, and the average baked weight (net) is about 580g (+/-20g) for most bread.
Specialty bread can be of different size, so do note the dough weight listed in the bread description.
Hence, for consistency, all weight indicated are based on DOUGH WEIGHT (DW) in grams, the weight of the dough before baking.
ARE THE BREAD VEGAN?
Essentially yes, as we do not add any eggs, dairy, animal-sourced additives, or meat/seafood in the making of our master dough.
However, for bread like Cheese Garlic, Cheese Jalapeño which include fillings of cheese, these bread are NOT vegan.
As for bread containing chocolate, we use dark chocolate that does not contain animal-sourced ingredients like milk, butter (and cocoa butter is vegan) to manufacture the chocolate as is.
However, as the chocolate factory also produces other products, there could potentially be traces of milk proteins (together with nuts and gluten) by means of contamination, hence listed as allergens. We believe that it is safe to say that our bread with chocolate are vegan-friendly.
SOURDOUGH COOKIES
HOW LONG CAN THE COOKIES LAST?
Less than 3 mins in my mouth. *lol*. Ok we know what you mean, our cookies, like our bread are made without preservatives, and they are baked fresh on the same day of collection. From that day, we recommend that the cookies are to be consumed within a week, assuming they are kept in good conditions like air-tight containers, in cool dry place. This is why we strongly encourage if you are not going to consume the cookies within 2-3 days, go ahead and freeze them. Follow our reheating instructions that come with all our cookies and you will be enjoy the cookie just as though they are just baked, even after weeks in freezer.
*Disclaimer: as we do not invest extensive food longevity research on our products, above suggestions are based on our experience. Everyone's storage conditions are different, and so we urge everyone to exercise common sense and caution even when within the 1 week period.
ARE THE COOKIES VEGAN?
Nope. The master cookie dough contains eggs and butter.
WHAT ARE THE ALLERGENS IN YOUR PRODUCTS?
We like our products to be safe for everyone's enjoyment. This is why we have kept our ingredients lean, clear and simple, however, we are not able to completely isolate products with potential allergen such as nuts between products without nuts during the production process. Therefore, cross contamination of allergens may be possible even with our best efforts.
We also have no control over our ingredients manufacturers such as chocolate which their factory may produce products with dairy/nuts/eggs, and even though our chocolate does NOT contain dairy/nut in official specification, we will still have to propagate our manufacturer's allergens warning within our own products.
In our bread labels, we do explicitly identify products which we actually added nuts and/or dairy. And all our cookies will contain dairy in the form of clarified butter which has minimum possible amounts of lactose and casein and is, therefore, may be acceptable to most who have a lactose intolerance or milk allergy.
Hence, with reasons listed above, we are also obligated to include all allergen even with potential traces of them as below:
ALLERGEN WARNING: ALL OUR PRODUCTS CONTAIN OR MAY HAVE TRACES OF WHEAT, SOY, EGGS, MILK AND NUTS.
