About this Recipe

By: Vincent

Our family’s jar of homemade pickled onions, always nestled between the spice rack and the flour bin, inspired today’s recipe. These onions are a little bit of our heart, pickled with laughter and love.

In creating a new spread for our beloved sourdough, these tangy treasures were essential. Mixed with succulent tuna, creamy Japanese mayo, a twist of lemon, and a pinch of seasoning, the spread is a testament to our home’s flavours.

284 grams of drained canned tuna

1/2 tsp of salt (to taste)

1/2 tsp of freshly ground black pepper (to taste)

4 tbsp of Japanese mayo

4 tbsp of small diced homemade pickled onion

2 tbsp of freshly squeezed lemon juice

Adorning our crusty sourdough, this spread is not just food, but a narrative of our culinary life. It’s our signature—rich, zesty, and unmistakably familial.

Enjoy this snippet of our table, and may it sprinkle a bit of joy onto yours.

Step by Step Instructions

Step 1

Prepare the Tuna: Open the cans of tuna and drain them thoroughly to remove any excess liquid. Transfer the tuna to a medium mixing bowl.

 Step 2

Season: Add the salt and freshly ground black pepper to the tuna. Stir gently to distribute the seasoning evenly throughout the tuna.

Step 3

Add Mayo: Dollop the Japanese mayo onto the seasoned tuna. Japanese mayo is typically creamier and slightly sweeter than its Western counterparts, which will add a unique flavour profile to your spread.

Step 4

Incorporate Pickled Onion: Add the diced homemade pickled onion to the mixture. The pickled onion will introduce a tangy kick that’ll contrast nicely with the creaminess of the mayo.

Step 5

Lemon Juice Zing: Squeeze the fresh lemon juice over the mixture. The citrus will brighten up the flavors and cut through the richness of the mayo.

Step 6

Mix: Using a fork, mix all the ingredients together until well combined. The texture should be spreadable but not too wet.

Step 7

Taste and Adjust: Give your spread a taste and adjust the seasoning if necessary. If you like it tangier, you might add a bit more lemon juice or pickled onion.

Step 8

Serve: Serve the tuna spread on slices of toasted bread, crackers, or as a dip for vegetables.

Serving Suggestions

You can garnish the spread with additional chopped pickled onions on top or a sprinkle of paprika for a pop of color and flavor.

To make it a heartier meal, serve it on top of a bed of greens or alongside a cup of soup.
