Don’t be alarmed if the outer edges of your cabbage attain a slight char during baking. This is not an error but a flavor advantage. Those charred portions infuse the cabbage with a rich, smoky depth, elevating the entire dish’s taste profile. As for the caraway seeds, their distinct flavor is a personal preference. If you or your guests are unfamiliar with caraway, you might consider starting with a modest amount or even presenting it as an optional sprinkle. That said, I wholeheartedly suggest trying it at least once; in my experience, its aromatic nuances harmoniously complement the cabbage, enhancing the dish’s flavor complexity. Step by Step Instructions

Step 1

Preheat the Oven: Begin by preheating your oven to 190°C.

Prepare the Cabbage: Remove any damaged outer leaves from the cabbage. Rinse the cabbage under cold water and pat dry. Slice the cabbage crosswise into approximately 4-5 (2 cm) thick circular slices, keeping as much of the round shape as possible.

Step 3

Season the Cabbage: Lay out the cabbage slices in a single layer in a large baking dish or on a baking tray lined with parchment paper. Drizzle the olive oil (be generous here) over them, ensuring both sides are well-coated. Sprinkle each slice with salt, freshly ground black pepper, and caraway seeds.

Step 4

Bake: Insert the baking dish or tray into the oven and bake for approximately 30-40 minutes.

Step 5

Check & Turn: At the halfway mark (around 15-20 minutes), carefully flip each cabbage slice to ensure even cooking and browning. Aim for the edges to become slightly crispy while the center remains tender.

Step 6

Serve: Once finished, extract from the oven and transfer the baked cabbage slices onto serving plates. If desired, sprinkle a tad more salt, and pepper before serving.
